Davide Oldani’s Recipe for Success (July 7, 2020)
In the inaugural edition of the the IACC’s new Cutting Edge Conversations Series, Davide Oldani, Chef/Owner of Michelin-Starred Ristorante D’O and Founder of POP Cuisine, spoke with IACC President Alberto Milani about food, passion and operational innovation.
During this one-hour program, Chef Oldani shared his recipe for success, including his “POP cuisine” philosophy which aims to make good food accessible to a broad audience in terms of both taste and cost. A philosophy that touches upon the importance and integrity of ingredient quality, wine pairings, authentic technique, and sustainability. In congruence with Oldani’s philosophy, and as a part of the True Italian Taste project, the IACC certifies authentic Italian restaurants and works towards the promotion of authentic Italian products (denoted through IGP, DOP, DOC, DOCG labels) within the United States.
The discussion was held in Italian with a live translation in English, and was broadcasted to the IACC network as well as live on YouTube.
